I love these crepes, how light and fluffy they are and they are really easy to make.
These are low in calories in high in protein which is a bonus too. Apart from all these benefits, my kids are just loving them, which means these are not only healthy, but tasty too! :)
There is only 64.4 g Kcal per one crepe and 8.8 - protein, 2.27 - carbs, 2.51 g - fat
So, the ingredients:
- 1 egg
- Low Fat MIlk (any) - 150 ml
- Rice Flour - 30 g
- Corn starch - 20 g
- Plant oil - 5 ml
- Vanilla
- Sweetener ( I use this one)
- In a bowl, break the egg, add warm milk, vanilla, sweetener and salt.
- Sift flour with starch and baking powder
- The dough should be smooth, without any lumps. Don't worry if the dough seems runny - that's how it should be! So you did everything right!
- Pour in plant oil at the end.
- Heat up a frying pan and spray with a little oil. I love using avocado or a sunflower spray.
- Mix the dough as the flour settles. Do this before making each crepe.
- Pour a thin layer of dough and fry a crepe on both sides
- You should get 6 crepes with a diameter of 17 cm
Enjoy them with sour cream, with cottage cheese or honey.
