These Lamingtons, originated in Australia, have a buttery sponge, a layer of tart raspberry handmade jam, chocolate icing and coconut coating. 

Ingredients: gf flour blend, eggs, monkfruit sugar, milk, butter, xanthan gum, dark chicolate, cocoa powder, handmade raspberry or strawberry jam, desiccated coconut, baking powder, salt, vanilla 

Store 3-4 days in a closed container at room temperature.
