I am so excited to say my book is progressing well, and soon I will be able to launch it. I have been procrastinating too long to finally do it, and finally the time has come. I have not decided to its name yet, but it will come once I finish the book.  

So here is the sneak peek to my book.

 

Introduction. 

The first time I transformed my grandmother's berry cobbler recipe into a gluten-free version that my entire family devoured without suspecting a thing, I knew I was onto something magical. That evening changed everything for me.

My journey with food wasn't just about preference—it was necessity. When I was diagnosed with arthritis and IBS in my early forties, the dietary restrictions felt like prison walls closing in. Gluten triggered painful inflammation in my joints, while conventional desserts sent my digestive system into chaos. Doctors handed me elimination diets and said goodbye to pastries, cakes, and cookies—essentially, farewell to joy.

For years, I'd struggled with the seemingly impossible choice between enjoying desserts I loved and managing my health. Each birthday celebration or holiday gathering became an exercise in explaining my restrictions or, worse, in suffering afterward. I'd watch others savor their cake while picking at "safe" options, or I'd indulge only to spend days in pain.

Then came my rebellion. In my sun-drenched kitchen with music playing and gluten-free flour, dusting every surface, I began experimenting. Could a cheesecake made primarily from cottage cheese truly satisfy like its cream cheese counterpart while providing the protein my body needed? Would my childhood favorite Napoleon taste and honey cake the same without the gluten that triggered my arthritis flares? The answers surprised even me.

This book holds the fruits of those countless Sunday afternoons—some triumphant, others hilariously disastrous. (My first attempt at gluten-free low calorie eclairs looked more like sad, deflated footballs than pastries!) But persistence revealed something extraordinary: desserts could be genuinely therapeutic, and most miraculously, I could enjoy dessert without fear.

Inside, you'll find recipes born from both medical necessity and passionate creativity. The Birds Milk cake that helped me through a difficult flare-up. The strawberry almond tart I created when my sister—who shares my autoimmune challenges—thought her wedding would mean missing out on a celebration cake. The cottage cheese doughnuts my twins every time ask for, blissfully unaware they're nothing like the sugar-laden, inflammation-triggering versions from the bakery.

These recipes aren't about deprivation or substitution—they're about reimagining dessert entirely as both pleasure and medicine. They've sustained me through midnight cravings, helped keep my symptoms in remission, and starred at dinner parties where guests demanded recipes while refusing to believe they were "healthy," let alone therapeutic.
